可以省略，standing behind the counter 是现在分词作定语修饰the man,句子的主语是the man 谓语是served 宾语是me,整个主句是the man served me，who is standing the counter用来修饰the man,告诉我们是什么样的一个man,一个站在柜台后面的男士。
