这个句子的主语是Eric,谓语是sprang和went（and连接的并列谓语）.

这个规则的说法倒是第一次见到。按照这个说法来理解，这里的（to）fall into the lake是做了see的宾语，也只能这样理解了。这里应该是吧to fall这个动作理解为一个宾语，或者说是把“小孩掉进湖”这整个动作理解成了宾语。主语是Eric，谓语是see
但是在我看来，如果你看的书上也真是这样理解的，那这个说法欠妥当，容易让人把这个跟宾语从句混淆。实际上这就是一个主谓宾宾补的句式...

On seeing the young child fall into the lake是分词短语,在整个句子中做状语,可以改为一个状语从句When Eric saw the young child fall into the lake.
