这个what 代指他Nasreddin做的事 作为关系代词，What (=The thing that) 但是这个 the thing 是什么呢，文中没说，Nasreddin对牛到底做了什么我们还不知道，所以只能用what

首先，要明白这是宾语从句。
在宾语从句中，that 在从句中不作成分，没有意思，一般可以省略。
what 在从句中可以作主语，宾语，或者表语。不可以省略。一般翻译为“所。。。的”。
如果删去引导词，句子仍然成立就用that，但是在这里很显然，doing后面缺少宾语,所以用what...
