[摘 要]：通过单因素试验对紫薯色素最大吸收波长、最佳提取溶剂、浸提时间及温度进行探讨,并对紫薯色素的稳定性进行了研究.结果如下：
紫薯色素的最佳提取条件为：最大吸收波长530 nm、最佳提取溶剂为5．0％柠檬酸、料液比1：10、浸提时间1 h、浸提温度60℃.
稳定性研究表明：色素的颜色和稳定性易受pH值的影响,酸性时较稳定；有较强的耐光性,耐还原能力比耐氧化能力强

Abstract：This article discussed maximum absorption wavelength of purple sweet potato pigment, the best extraction solvent, extraction time and temperature by single factor test.And purple sweet potato pigment stability were studied. The optimum conditions of extraction were obtained as follows: maximum absorption wavelength was 530 nm、the best extraction solvent was Citric acid、solid-liquid ratio was1:10、time was 60 min、temperature was 60℃.
Stability study shows that the color and stability of pigment could be impacted by pH value, more stable at acidic; It had a strong light resistance.Restore the ability of resistance was strong than to oxidation .
